The molecules in a2 milk are MUCH smaller than those of a1 milk (cow milk) and therefore break down in our digestive tract much easier. Similarly, the physical structure of the molecules are simpler (very similar to the structure of human breast milk), so our bodies can break them down easier. Goat milk contains higher concentrations of essential fatty acids (medium chain triglycerides), which are more easily converted to energy and less prone to fat storage. Goat milk contains 2x the amount of these essential fatty acids than cow milk!
